This is the basic method for creating an infusion…

  • Bring Water to a boil (not a rolling boil) *steaming with pin-point bubbles popping to the top*
  • Pour a little into your pot to warm the inside, throw it out! Then pour 2 cups of the water into the pot. Crush the herbs, then add 1 to 3 oz. of the herbs to the water; stir to make sure all of the herbs are wet. then cover and let the infusion steep for 10 to 20 minutes. Pour brew through cheesecloth or a fine mesh strainer to remove the excess herbs.
